These are my guesses:

Lots of Meat, Reindeer & Farm Animals, much of it preserved in salt
Lots of fish, much of it salted
A fair amount of eggs and dairy
Fruits few, and only in season
Mostly cruciferous and winter vegetables
Onions ?
Maybe some potatoes
